Traditional name for a hot smoked (ready to eat) whole herring with roe left in. This was a common way to enjoy Herring many years ago and we have preserved the tradition. Imagine a king sized Sardine and you have some sense of the Buckling. We offer the Buckling as plain vacuum packed fish or can be cooked and supplied with Garlic to add a certain je ne sais quoi.
