Smoked Sardines & Sprats
Smoked Sprats & Sardines are both fish in the Clupeidae family which also includes Herring.
They are small fish rich in oils and are found in large shoals in temperate and cold seas. They are both popular eating fish and are generally eaten whole. Hot smoking these fish give them a wonderful flavour and they are often used as a starter or snack with toast. They can be heated through and again because of their oil content they do not dry out.
