Hot Smoked Ready to Eat Kippers Fillet (Clupea harengus)
Ready to Eat Kipper fillets are cured and smoked over Oak chips in the traditional way, we then "finish" them in a hot Kiln for about 15 minutes. The result is a Kipper fillet that you can eat straight from the pack saving time and a smelly kitchen.
Herring is a wonderful, healthy and very underestimated fish, Pre cooked Kippers are popular both hot and cold, they can be gently warmed or poached and served with bread or salad. There are fine bones in Kipper fillets so some care is needed but if you are looking for taste and convenience then the ready to eat kipper fillets are worth trying. They also make a good fish pate if mixed with Creme Fraiche, Cracked Black Pepper and Lemon Juice. Nice on Toast.
