Herring Splits (Clupea harengus) approx 300g each fish.
Kippers are hand cut, washed, brined, chilled and smoked for a minimum of 18 hours over Oak dust. Further chilling packing and labeling is carried out after smoking as required

Lowestoft Cure - Oak Smoked
Lowestoft Cure - Brined with mineral salt and cured for 3 hours before smoking. Slow smoke rapid chill to 4 degrees within 90 minutes of kiln exit.
Available loose boxed or vacuum packed

Grill or Simmer for 2-3 Mins - Add butter when serving if desired -or boil in the bag for 5 Mins
