Traditionally Smoked Kipper Fillets (Clupea harengus)
Ready to Eat Kipper fillets are cut from the whole fish, cured and brined in the traditional way and then hot smoked rather than cold smoked. The result is a herring that does not smell the kitchen out. You can gently warm it or enjoy them cold whichever you prefer. They make a great salad with a little lemon or creme fraiche or a simple "on hot toast" snack. Beware of the bones, a little bread or toast works well.
