New to our range in 2018 Our 36 Hr Smoked Salmon cured using mineral salt to reduce moisture contents while retaining the natural oils on the fish. After chilling we gently smoke it over Oak shavings and dust for a minimum of 36 hrs to give it a very distinctive flavour. After one and a half days in our kilns it is moved to the chiller for maturation and then packing..
Our 36 Hr Smoked Salmon is available as whole sides uncut which are approximately 1 Kg in weight or D sliced with thin slices down to the skin. We also offer 200g packs.
